Cream of Zucchini Soup – Romige Courgette soep
I love to organize dinner party’s at home and my favorite recipes are often Italian inspired. I like to make beautiful dishes but they mustn’t be too complicated, 3 or 4 courses and not more than a day and a half in the kitchen.
So if you like to have something different, something that looks great and tastes very delicious … I can definitely recommend this soup. To give you some extra time on the day itself, you can prepare this starter in advance and just finish it off before you dish up!
3 tbsp olive oil
1 onion, cut in small cubes
1 kg Zucchini, sliced (courgette)
1 tsp dried oregano
Approx. 600 ml vegetable or chicken stock
125 g cremezola ( a creamy blue cheese)
300 ml cream
Salt, fresh grounded black pepper, fresh oregano.
Heat the oil and sauté the onions until soft and golden
Add the zucchini, oregano, salt and pepper and sauté for 10 minutes stirring regularly
Add the stock and bring to a boil for approx. 30 minutes
Purée in a food processor or with a hand blender (sieve if you like)
Add the cremezola and stir until it is melted in
Add 2/3 of the cream (if you prepare the soup earlier then add on the day of the dinner)
Serve with a swirl of cream and sprinkle some fresh oregano over it.
